Pork Plain Sausage
This year we have a simple but delicious plain recipe for our sausage, this will allow the full flavour of our Tamworth pork to come through, especially after a few month’s gorging on the mass of acorns around the Wilding project.
We blend our minced Tamworth pork with the perfect amount of sea salt, white pepper and a small amount of gluten free buckwheat flour, then fill natural sausage casings and hand-tie.
We like them sliced down the middle for an indulgent sandwich, with a little coarse mustard and some caramelised onions.
But they’re perfect for a fry up too, or for sausage and mash.
Pan fry or grill until the juices run clear when pricked with a fork.
Our sausages come in packs of 6 but as they are hand-tied there may be a small variation in sizes in each pack.
Ingredients: Pork, buckwheat flour (gluten free), sea salt, white pepper.
