Our dry cured raw salt beef brisket has a perfect balance of aromatics to salt, we add a touch of rapadura unrefined sugar to help balance all the flavours. This is a must for a deep sandwich, matching particularly well with pickled gherkins.

Ingredients: Beef Brisket, Ground Coriander, Ground Black Pepper, Fennel Seeds, Bay Leaf, Garlic Powder, Rapadura (unrefined sugar), Sodium Nitrite Salt*.

Allergen information: *Sodium Nitrite

Cooking instructions:

Place the salt beef in a large pan and cover with cold water. Peel and quarter 1 x large onion then add to the pan, also add 2 x bay leaves, 6 x black peppercorns, 1 x large carrot, peeled and cut into 4 pieces.

Bring to the boil, reduce the heat to a low simmer and cook until tender (approximately 1 hr 45 minutes for a 1 kg piece).

Enjoy hot or cold.
