Simply heat your preferred pan until searing hot, season the fillet joint liberally and place into the pan and sear all over to create a rich dark crust. Either continue cooking in your pan for 8-10 minutes, basting regularly and rest well before serving or alternatively, why not create a real centrepiece and make a beef wellington?
